New Sous Chef from Crown to CH James

CH James prides itself on employing top staff in the hospitality industry and welcomes Finalist in the Apprentice of the Year 2014 Rebecca Woodcock to the team to work with our acclaimed Head Chef Franck Verschaeve.

Rebecca comes to CH James with high skill levels with a Cert III in Hospitality (Commercial Cookery) from Crown College and a great attitude, having been trained by the best.

Rebecca was also the Crown Melbourne Apprentice of the Year 2014 and was a chef in the kitchen at Mr Hive Kitchen and Bar.

Frenchman Franck Verschaeve, Head Chef at CH James is classically trained from a fine dining background, and has brought his skills and verve to the cafe scene. Franck has been receiving a stream of acclaim for his dishes that bring technique and verve - with fine dining techniques applied to cafe dishes. Everything at CH James is made from scratch, with Franck having control over the whole kitchen process, including making his own jams, sauces and relishes.

Indoor and outdoor come together seamlessly. Come through the side entrance or walk through the indoor space which looks out to the garden...

Check out our courtyard, enjoy excellent food and drink, and take in the garden ambience. Attractive planter boxes set the scene. We employed the services of leading Melbourne garden service Leaf, Root & Fruit to set up and maintain our edible courtyard garden. Here they are setting up the planter boxes with beautiful plants and choice soil. Daniel is an expert on all things contemporary edible gardens!
